Coffee with a chocolate base, lactic and yellow fruit notes; it is sweet, full-bodied with medium/low acidity.
medium/low acidity.
Mr. Luis Ricardo Chincilla belongs to one of the founding families of coffee in the area, which is why his whole life has been marked by his love for this crop. From a very young age, in the company of his father, he has found himself working at Finca Rosalía, in the district of Purral.
The initial productive conditions were not the best, since they only had empirical knowledge and the coffee plantation was planted with different varieties of coffee, in addition to the fact that there was no strict control of the pests that affected it. It was in 1975 when Don Luis Ricardo received as a family legacy La Finca, which by then was three hectares in size.
Already marked by the experience and knowledge acquired through the years in the matter of cultivation, in 1986, Don Luis Ricardo was presented with the option of expanding the farm, since one of his relatives offered to sell the adjacent part (Finca Los Cuadros), but this was destined to cattle raising; without thinking about it, Don Luis Ricardo used his savings to buy the land and prepare it to grow the crop (Finca Los Cuadros).
It is with this purchase that Finca Rosalía together with Finca Los Cuadros merged and are cultivated entirely with coffee. The pests have been increasing their resistance, which is why today the micro-lots are planted with resistant varieties such as: Obatá, Costa Rica 95 and San Isidro.
All the work done on the farm has not only been the work of Mr. Luis Ricardo, because the coffee pickers have also had a great responsibility to comply with all the instructions and parameters given to deliver an excellent product. It is important to mention that the harvest at its peak provides work for approximately 50 families in the area, and even many others migrate from Nicaragua and other remote areas of the country to join the harvest. This historical review is marked by an unparalleled love for maintaining a family legacy, and for safeguarding a Costa Rican tradition.
